Creamy Chicken with Feta and Tomatoes
Creamy Chicken with Feta and Tomatoes
serves 6
2/3 c flour
2 tsp paprika
2 tsp oregano
1 tsp salt
1 1/2 lb boneless, skinless chicken thighs
1/4 c butter
2 c chopped onions
4 cloves garlic, finely chopped
2 c milk
1 28-oz can of diced tomatoes
1/4 lb feta cheese, crumbled
1/4 c chopped parsley
Preheat the oven to 350°F. Combine the flour, paprika, oregano and salt in a shallow bowl. Roll the chicken in the flour mixture. Save the remaining flour mixture. In a large, heavy pan over medium heat, melt half the butter or margarine. Add the chicken without overcrowding the pan and cook until lightly browned on both sides. Remove from the pan and arrange in a 9 x 13-inch baking dish. Continue with the remaining chicken. Add the remaining butter or margarine to the pan. Add the onion and garlic and saute until the onion is soft. Stir in ¼ cup of the remaining flour mixture and cook about 2 minutes or until bubbly and lightly browned. Slowly whisk in the milk and bring to a boil, stirring frequently. Add the tomatoes. Season to taste and pour the tomato mixture over the chicken. Cover and bake for 40 minutes. Uncover and sprinkle with the feta cheese. Bake for 5 minutes longer. Let rest for 5 minutes, then sprinkle with parsley and serve.

Rejuvenated!
With many thanks for the generosity of TreeCanada (http://treecanada.ca/en/ programs/greening-canadas- school-grounds/) and FedEx Express (http://www.fedex.com/ca_ english/about/eventandsponsor/ ), plus the efforts of some special parents, our school has a new front entrance garden!
We now have a gorgeous pink flowering ornamental cherry tree (Prunus x yedoensis "Akebono") as our main centerpiece, as well as some beautiful purple flowering California Lilac shrubs and some smaller purple flowering Heather plants, making the front of our school even more welcoming. We are very grateful to our donors, and appreciate their commitment to greening Canada's schools.

GRAPE TOMATOES
Grown on a vine, botanically, a tomato is the ovary and seeds of a flowering plant. It is, in fact, a fruit.
There are around 7,500 tomato varieties grown for various purposes.
Tomatoes contain lycopene, which has been shown to improve the skin's ability to protect against harmful UV rays.
For further information, fascinating facts and interesting history on these delicious fruits please read the PDF document on TOMATOES.
Students will receive their tomatoes on Wednesday during class time. This snack is not meant to replace the foods students normally eat at school. Students can make their own decisions on whether to taste the fruit or vegetables offered.
If you have any questions or concerns, please contact the PAC via e-mail or contact the school administration at 604-713-4620.

VSB Public Education Parent Survey
The VSB is asking for your input! Please see the information below to fill out their survey.
Share your thoughts about public schools and public education!
The world of education is a competitive place. Parents have many options to consider when they are deciding where to enroll their children. For public schools this means we need to constantly be innovating, improving the services and programs we offer, and ensuring the greatest success possible for every student. In order to do this effectively, we need feedback from our parent community.
With this in mind, the Vancouver School Board is surveying current and future school community members about what they like or dislike about public schools and what challenges and opportunities they perceive. We want to hear from parents about the perceptions they hold about public and private education as well as the factors motivating them when choosing where to enroll their children.
To accomplish this, the Vancouver School Board is conducting an online survey of parents to collect their views. We greatly value the opinion of parents and would appreciate it if you would notify them of this short questionnaire.
Please feel free to forward this email and survey invite to your parent community. We are also sending paper flyers to preschools, daycares and Strong Starts around Vancouver. Please consider distributing these flyers among your parent community.
All of the information gathered will be reported to the Vancouver School Board. The confidentiality and anonymity of those who complete the survey will be ensured. Thank you for your support of this initiative.
